Garum x The Westin Perth – Documentation

A visual expression of origin, detail, and contemporary ritual.

In a collaboration between acclaimed chef Guy Grossi and The Westin Perth, a new wine experience was shaped around an ancient idea. One drawn from Roman practice, where wines were first categorised by colour, then by varietal. Simple, refined, and timeless.

Barbitta was engaged to document the making of this experience and building of a new restaurant called Garum. From the sourcing of premium down south produce to the creation of a bespoke wine blend in partnership with Western Australia’s iconic Voyager Estate. The result was not just a film, but a sensory portrait. One that captured not the process alone, but the feeling behind it.

Shot on location across vineyard, kitchen, and table, the photography and film was shot to reflect the care embedded in each step. No overproduction. Just light, sound, and atmosphere, revealing the vision and detail that define the collaboration.

Guided by the MeaningForm, and Atmosphere tiles of the Barbitta Mosaic™, the documentary approach favoured presence over persuasion. Slow motion, environmental audio, and soft framing allowed each ingredient, gesture, and moment to breathe. The result is a quiet study in provenance, intention, and hospitality.
